Meaty Nacho Cheese Dip
MEATY NACHO CHEESE DIP
This dip is great because it can be varied so many different ways, to suit everyone's tastes by using different spices, different cheeses, different meats, different veggie additions! This is just my favourite way to make it!
¼ pound ground meat of your preference (beef, pork, turkey, etc)
4 tablespoons taco seasoning, divided (click link for recipe!)
3 tablespoons butter
3 tablespoons flour
1 ½ cups milk
1 ½ cups shredded Chipotle Jack cheese
1 cup shredded Colby Jack cheese
1 can (4 ounces) diced green chiles
1 can (4 ounces) diced jalepenos
seasoning salt and pepper
Brown ground meat in a skillet over medium-high heat until cooked through. Drain grease. Add 3 tablespoons taco seasoning and ¼ cup water. Stir until seasoning is absorbed and all water is cooked off. Set aside.
In a large sauce pan or double-boiler, melt butter. Add flower and stir, making a roux. Once roux is a smooth paste, add milk all at once and stir quickly to remove any lumps. Add 1 tablespoon taco seasoning, and salt and pepper to taste. Bring to a boil, then turn heat to medium-low until sauce thickens. Gradually add cheeses, chiles, and peppers. Stir until cheese is melted. Fold in ground meat and serve hot.
