2 cups cubed pound cake
1 cup pecans, toasted
1 cup confectioner sugar, plus extra for rolling
1 to 2 tablespoons bourbon
Toasting Pecans:
Pour pecans into a medium-sized skillet. Over medium heat, toast for 5-10 minutes, stirring constantly to keep from burning. Once browned, remove from heat.
In a food processor, combine cake, pecans and sugar; pulse several times to mix well. Add bourbon a little at a time, just until moistened and it forms a soft, pliable dough. Turn out dough onto work surface lightly dusted with confectioners sugar. Dust your hands lightly with the confectioners sugar; pull off walnut-sized pieces and roll them betwen your palms to form compact balls. Roll balls in confectioners sugar.
