Follow all steps for focaccia dough. Instead of placing risen dough on greased baking sheet, place dough on lightly flowered surface or counter top and pat into an even square, about 1 ½" high.
Using a knife, gently cut strips that are about ½" thick from dough-square. Using the palm of your hands, roll strips out until they're long and about ¼" thick. Cut long strip evenly into two pieces. Pinch two pieces together at one end. Place pepperoni between strips and twist strips together, securing pepperoni between them.
Preheat oven to 450ºF. Place finished pepperoni twists onto a greased baking sheet or ungreased silicone baking sheet. Brush tops with olive oil. Sprinkle with Mozzarella and/or Parmesan cheeses. Bake at 450ºF for 10-15 minutes, or until golden brown.
