Raw Veggie Dip RAW VEGGIE DIP
I believe this is my great grandmother's recipe, but my mother would make this every summer once our garden was in full bloom. Delicious!

3 tablespoons sugar
3 tablespoons white vinegar
3 tablespoons butter or margarine
3 egg yolks
2 8-ounce packages of cream cheese, softened
1 small onion, grated
1 small green pepper, grated

Mix all ingredients of 3's (sugar, vinegar, butter, yolks) in a small saucepan. Heat at low temperature until thickened, stirring constantly. Let mixture cool.

Meanwhile, grate onion and green pepper into softened cream cheese. Pour cooled mixture into cheese and blend together. Refrigerate at least 1 hour before serving. Serve with crisp, raw veggies. My family's favourites are carrots, broccoli, cauliflower, celery, and green pepper.
